Recipe: Suya-Spiced Roasted Sweet Potatoes

Ingredients 

  • 2 large, sweet potatoes, peeled & cubed (about 1½ lbs) 
  • 1½ tbsp Yaji Spice Suya Blend 
  • 2 tbsp olive oil 
  • ½ tsp sea salt 
  • 1 tbsp chopped fresh parsley (optional garnish) 

 

Instructions 

  1. Preheat your oven to 400 °F (200 °C). 
  2. In a large bowl, toss the sweet potato cubes with olive oil, the Suya Blend, and salt until everything is well coated. 
  3. Spread the cubes out in a single layer on a parchment-lined baking sheet. 
  4. Roast for 20-25 minutes, stirring once about halfway through, until the potatoes are golden-brown and tender. 
  5. Remove from the oven, sprinkle with parsley if desired, and serve immediately.
