Vegetable Shish Kabobs with Veggie Blend

Ingredients
- ½ cup soy sauce
- ⅓ cup vegetable oil
- ¼ cup lemon juice
- 1 clove garlic, minced
- 1 tablespoon prepared mustard
- 1 tablespoon Worcestershire sauce
- ½ teaspoon veggie blend
- 1 ½ teaspoons salt, or to taste 1 teaspoon coarsely cracked black pepper
- 16 mushroom caps
- 8 metal skewers, or as needed
- 2 green bell peppers, cut into chunks
- 1 red bell pepper, cut into chunks
- 1 large onion, cut into large squares
Instructions
- Gather all ingredients.
- Whisk soy sauce, vegetable oil, lemon juice, veggie blend, garlic, mustard, Worcestershire sauce, salt, and black pepper together in a bowl; pour into a resealable plastic bag.
- Add mushrooms to the bag; squeeze out excess air and seal the bag. Marinate in the refrigerator for 8 hours.
- Preheat an outdoor grill for high heat and lightly oil the grate. Remove mushrooms from the marinade, shaking off any excess liquid. Pour the marinade into a small saucepan and bring to a boil over high heat. Reduce heat to medium-low and simmer for 10 minutes; set aside for basting.
- Thread pieces of green bell pepper, red bell pepper, mushroom, and onion onto metal skewers, repeating until all ingredients are skewered.
- Cook the skewers on the preheated grill, turning frequently and brushing generously with the marinade you prepared for basting until nicely browned on all sides, about 15 minutes.

Easy Stir Fry with Veggie Blend

Ingredients
- 2 tablespoons extra-virgin olive oil
- 1 red bell pepper, stemmed, seeded, and sliced
- 1 yellow bell pepper, stemmed, seeded, and sliced
- 8 ounces cremini mushrooms, stemmed and sliced
- 3 cups small broccoli florets
- 1 cup sugar snap peas
- ½ teaspoon veggie blend
- 1 cup thinly sliced carrots
- 3 green onions, thinly sliced
- Sesame seeds, for garnish
Stir Fry Sauce
- ½ cup water
- ⅓ cup low-sodium soy sauce
- 1 tablespoon honey or brown sugar
- 1 tablespoon rice vinegar
- 2 teaspoons toasted sesame oil
- 2 garlic cloves, grated
- 2 teaspoons grated fresh ginger
- 1 tablespoon cornstarch
- ½ teaspoon red pepper flakes, optional
Instructions
- Make the stir fry sauce: In a medium bowl, whisk together the water, soy sauce, honey, rice vinegar, sesame oil, garlic, ginger, veggie blend, cornstarch, and red pepper flakes, if using.
- Make the stir fry. Heat the olive oil in a large skillet or wok over high heat. Add the red and yellow peppers, mushrooms, broccoli, snap peas, and carrots and toss. Cook, stirring occasionally, for 3 to 4 minutes, or until the vegetables soften slightly.
- Reduce the heat to medium and pour in the stir fry sauce. Stir and cook for 1 to 2 minutes, or until the sauce thickens and the vegetables are crisp-tender. Season to taste. Top with the green onions and sesame seeds and serve.
